Nearly ten percent of Wisconsin residents take to the field for the annual hunt, along with thousands more who will participate by providing food, hotels and other services.
Venison is the meat of a deer. Venison can be used to refer to any part of the deer, so long as it can be consumed, including the flesh and internal organs. Wikipedia.
I have a hunter in the family, so I have learned different ways of cooking wild game.
This is one of my favorites for venison.
2 med. onions peeled and sliced
2 tbl. of olive oil
2 lbs. venison, cut in 1 inch cubes
1 1/2 tbl. flour
1/2 teas. marjoram
1/2 teas. tyme
1/2 teas. pepper
1 (10 1/2 oz.) can beef consomme'
1 (10 1/2 oz.) can beef broth, double strength
1 cup burgundy (or other hearty red wine)
3/4 lb. fresh mushroons
Saute onions in olive oil in dutch oven until translucent, remove onions and set aside. Add
venison to dutch oven and cook, adding a bit more oil if needed. When browned well on all
sides, sprinkle flour, marjoram, thyme and pepper over venison. Stir for about a minute to
coat venison well and cook flour.
Then add consomme', broth and burgundy and stir. Simmer very slowly for about 3 to 31/2
hours until venison is tender. Allow to cook down for intense flavor. More consomme' and
wine may be added if needed.
After cooking, return onions to dutch oven and add mushrooms. Stir well and simmer another hour. The sauce should be thick and dark brown. Serve with a wild and white rice
mixture, roasted asparagus, garlic bread sticks and burgundy.
